Clerks II Posters...
Mmmmmmmmmmmmmmmm Rosario Dawson...
That's a little shameless, actually. I bet she doesn't dress like that in the film - I've seen her in promo pics and the trailers, and she's wearing the Mooby's outfit. Still, though - day-um.
Anyway. *Cough*. Meanwhile, I'm starting to wonder... could it be that this film, this sequel that should never have happened... might actually turn out to be really good? There's a tendency to bash Smith in recent years, a tendency that casually ignores the fact that he really hasn't ever made a truly duff film (come on, Jersey Girl wasn't without merit - it deserves credit alone for killing off J.Lo after only ten minutes). But he's not the kind of guy to come and outright lie on his personal blog about the reception the film got at Cannes and at its preview screening. If people - people who weren't just a room full of Askewniverse fans - genuinely loved it... then maybe, just maybe, we might have something really special on our hands.
And it's hard to feel aggrieved by there being another Askewniverse film after the now-false "ending" of Jay and Silent Bob Strike Back for the simple reason that... well, come on. Look at the posters. Can anyone honestly say that it doesn't feel good to have Dante, Randal and - yes - the Gruesome Twosome back around?
Thought not.

I've never seen even one second of a Kevin Smith film. I probably won't start with this one.
If I WERE to start, though, what should I be renting?

You generally can't go wrong taking them in chronological order :
Clerks
Mallrats
Chasing Amy
Dogma
Jay and Silent Bob Strike Back
Although the strict storyline order would reverse Clerks and Mallrats, as the latter takes place a day before the former.
Depends what sort of thing you're likely to like, though. Clerks is rough and ready, but superbly sharp and funny. Mallrats is a wonderful silly John Hughes-style teen movie with tons of comic book references. Chasing Amy is, however, the deepest and most intelligent of the films, with the best performances, the best story and the best script. It's a film I'd wholeheartedly recommend to anyone - plus, if you find Jay and Silent Bob annoying, they're only in one scene.
Dogma is completely different to the rest, and is very good but also not without flaws. And Strike Back is one big injoke, most rewarding if you've seen all the other films, a little silly and unrewarding if you haven't.

I can't help noticing you totally ignored Jersey Girl in that list ;-)
Jersey Girl was actually really good for what it is - a family comedy about fatherhood. Totally removed from his usual fare, but I think it's at least as complete a film as Chasing Amy, even if the latter is far superior just because it's so much more personal.
For the record, I never expected this to be bad. The only thing he's written that's ever disappointed me was the second half of the Spider-Man/Black Cat series. In my mind, there's no reason to believe that Clerks 2 will be the point he turns shit, and so far everything I've seen and heard about the project has supported that belief.
